The whole brisket contains the first and second cut. When we leave the first cut on, the fatter second cut is allowed to melt into both cuts and make a superior brisket. Perfect for corned beef or your favorite roast. The size will be a Minimum 12 LBS, remember this will shrink 30-40%, and recommended servings is 1/2 -2/3 LB per person.
