The rack will weigh 2 - 3 LB and have 7 - 8 points. It is sold whole only. A whole rack will serve 2 - 3.
The shoulder roast weighs between 3 - 5LB and sold whole. It will serve 8 - 12.
The striploin is sold by the steak. Each steak averages 3/4LB.
